3 recipes for you!

Here are three recipes that we enjoy quite often. All are fairly inexpensive and they all taste great. Pork is usually on sale at this time of the year and I buy it in quantity to use throughout the year.

Tex-Mex Pulled Pork
1-8 ounce can tomato sauce
1 cup barbeque sauce
1 medium onion, sliced thin
2-4 ounce cans green chilies
1/4-cup chili powder
1 tsp. each cumin and oregano
2-1/2 pound pork loin roast
1/2 cup chopped cilantro

Mix together the first 6 ingredients (up to the oregano). Place the pork in a crock pot and pour the sauce over. Cook for 8-10 hours on low. Remove pork and place it on a cutting board. Shred it using two forks. Stir the shredded pork back into the sauce and add the cilantro. Serve the meat in flour tortillas with chopped cabbage or cole slaw.

Black Bean Salsa
Dressing:
1/2 cup vegetable oil
1/4 cup red wine vinegar
1/2 tsp. salt
1/8 tsp. Tabasco sauce

Salsa:
2-16 ounce cans black beans (rinsed and drained)
2 cans mexi-corn (drained)
1/2 cup chopped green onions

Extras:
1 large tomato, chopped
1 avocado, chopped

Stir the dressing ingredients together. Mix the salsa ingredients together. Pour the dressing over the salsa ingredients and chill for 3-4 hours. Add the tomato and the avocado and serve as a side salad or with tortilla chips.

French Bread
1 cup + 2 TB. water
1-1/2 tsp. salt
3 cups bread flour
2 tsp. yeast

Add all ingredients to your bread machine and put it through the dough cycle. When dough is done, shape it into a 12 inch loaf and place it on a baking sheet sprinkled with cornmeal. Dust the top of the loaf with flour and slash it with a knife. Cover and let rise until double. Bake at 450 degrees for 20 minutes and serve warm.
