A few days ago, Emily and I made a TON of salsa--40 cups of it to be exact! We have a wonderful farmer's market here in town so the veggies are fresh and not too expensive. This year we froze it simply because it is much easier than canning and our freezer is now packed with Ziploc bags full of spicy salsa! Here is the "recipe" we used. It is one of those "a little bit of this and a little bit of that" recipes from my Grandma. You can add more or less of any of the ingredients, depending on your family's taste for spice:
2 cups chopped, fresh tomatoes
1/3 cup chopped white onion
2 cloves minced garlic
1 chopped jalapeno
juice of 1/2 of a lemon or a lime
1/4 cup chopped cilantro
salt and pepper to taste
Mix all ingredients together until you like the taste (the jalapenos will get a little hotter as the salsa sits) and then refrigerate it for about 2 hours. Serve it with tortilla chips.
This is very yummy and it will go fast so be sure to make plenty!
