This recipe is from a children's cookbook that I ordered through the mail when my girls were little. It is one of our family favorites and it is perfect way to use up too-ripe bananas.
Banana Bread
3/4 cup sugar
3 ripe bananas, mashed
3/4 cup vegetable oil (I use half milk and half oil to equal 3/4 cup)
2 eggs
2 cups flour
1 tsp. baking soda
2 tsps. vanilla
1/2 tsp. baking powder
1/2 tsp. salt
Heat oven to 325 degrees and grease a 9X5X3-inch loaf pan.
Mix sugar, bananas, oil and eggs in a large bowl. Stir in the remaining ingredients. Pour this mixture into the loaf pan. Bake until wooden toothpick inserted in the center of the loaf comes out clean, about 60-70 minutes. Cool completely before serving.
